This year, I am growing witloof which is something I grew up with in the netherlands. I sowed seeds early spring, and then in April, I set it out in the garden. It looks like lettuce or dandelion, but it is not. Right now they are still bushy clusters of leaves, and in the fall, I will harvest the entire plants i will cut off the leaves and stick the roots in a dark black bin with a lid. I will force the witloof in the dark, and then I will harvest these probably around November. I am going to start seeds over the winter to try to grow another batch in spring.
Tip: when you harvest the white witloof, take out the bitter core before cooking or cutting it up. It can be cut up as a salad, raw or boiled. I like mine as a casserole, boiled, and topped with ham cubes, cheese sauce, and chopped hardboiled eggs.
