This is a super easy, simple hot sauce recipe with minimal ingredients. While the recipe says to cook the ingredients, you can also prepare this raw or fermented. I have made this recipe both cooked and raw.
EASY HOT PEPPER SAUCE RECIPE
Ingredients:
1/4 pound Hot peppers
1/2 cup Water
1/4 cup Vinegar
Salt

For this particular recipe, I used 3 different type of hot peppers.
Takanotsume (top), also called hawk's claw, a specialty pepper originally from Japan. SHU: 30,000 - 50,000
Orange Habanero, (middle) originally from the Yucatan in Mexico. SHU: 300,000
Cayenne Pepper (bottom) is known to be pre-Columbian in origin. It is said to be named after the Cayenne River in French Guyana. SHU: 30,000 - 50,000
SHU stands for Scoville Heat Units
Directions:
Place your stemmed peppers (I leave the seeds in for maximum spiciness), garlic cloves, salt and water in a saucepan.
Bring to a boil, reduce to a simmer, and cook until the peppers are totally softened, about 20 minutes depending on their size.
Optional: instead of heating with water, heat on high with oil. This is also known as "blistering"
**Both options are very spicy** Use caution.
Remove the pan from the heat and add distilled vinegar to help preserve the hot sauce and to add a nice level of tang. Using an immersion blender or a blender, puree until smooth.
Pour into a jar of your choice. Refrigerate and enjoy for months.
This is my raw version and it was delicious!

For my raw version, I rinsed all of my produce then added all ingredients to my blender. Blend on high until smooth. Pour into a glass container and refrigerate.
So easy!

I love that it has such few ingredients and seems so easy to make. Definitely will be making this soon with my peppers that are going crazy!
