Lettuce microgreens are young seedlings of lettuce that are approximately 1–3 inches tall. They have a more intense flavor and higher nutritional value than mature lettuce. The microgreens are usually harvested 7–14 days after germination when the cotyledon leaves have fully developed.
To grow to maturity:
50-60 days. Beta vulgaris
European heirloom dating back to the 1860s. Belongs to the same species as chard and beets, but it has distinctive differences.
The taste is more like a true spinach than ordinary chard, and the leaves look like spinach too. Perpetual Spinach leaves are flatter and more pointed than chard, with slimmer stems.
An excellent no-fuss warm weather substitute for spinach in the Southeast.
