Wondering how to grow your favorite greens?  Looking for unique varieties that aren't necessarily available in the store? This is a great place to start if you're looking for more information on unique varieties of heirloom greens.

 
 Spinach is a super-cold-hardy leafy green that can be planted in very early spring, as well as in fall and even winter in some areas. 


 
 Kale is a member of the Brassica family, like cabbage, broccoli and brussels sprouts. In many regions, kale is best grown in autumn, when temperatures are cooler. Kale tastes better when the leaves mature in cold weather. 

 
 Swiss chard, also referred to as "chard," is a member of the beet family that does well in both cool and warm temperatures. 
 
 
 
 Arugula, also referred to as "roquette" or "rocket," is a fast-growing, cool-season salad green that adds a tangy, mustard-like flavor to salads.

 
Bibb type lettuces are known for their 'buttery' taste and velvety texture, and small loosely formed heads. Relative to most other lettuce types, Bibbs are slightly more tolerant of heat.  
 
 
  Orach is a cool-season plant that is most productive and flavorful when grown in spring and fall. It is more tolerant of both heat and cold than spinach.
 
 
 
Romaine is another cool-season crop that grows well in the spring and fall in most regions. 
Romaine can be harvested by removing the outer leaves, digging up the whole plant, or cutting the plant about an inch above the soil surface.  
 
 
 Endive is a member of the chicory family, which includes radicchio, escarole, frisee and curly endive 
 
 
 Start seeds indoors in late winter and set out in very early spring. Sow again in fall, and allow plants to grow through the winter.

 
 
The collard is a cool-season crop that should be grown during early spring or fall. The mature plant will withstand frosts and light to medium freezes.

Mustard is a cool-season leaf crop. Sow mustard as early as 4 to 6 weeks before the average last frost date in spring and again in late summer for a fall crop.


 
Chinese cabbage which includes pak choy, Tatsoi, Michilhili and Napa is a cool-weather vegetable.
Sow in spring while the soil is still cool. Plant again in late summer for harvesting in the fall. 
 
 
 
The amaranth plant is a grain and greens crop plant and is one of several heat-tolerant greens.
Amaranth greens vary in color depending on the cultivar - some are bright green, others are variegated green-and-red or streaked with purple.
 
 
Chenopodium capitatum 
Strawberry spinach belongs to the plant family Chenopodiacae, which is otherwise known as the goosefoot family. The goosefoot family include spinach, Swiss chard, beets and many others.
