Easy Homemade Meatball Recipe (GF option)

I'm really excited to start sharing more Harvest Recipes! During a live chat a few months ago, I was asked about Eggplant and it sort of pushed me to share more easy to make recipes with homegrown recipes.

These easy to make meatballs make a great freezer meal as well. They can be cooked and frozen or frozen raw and cooked up at a later time. I love simple meals!

This one in particular also has a gluten free/keto/low carb option with 1 simple substitute. Read on for the full recipe.

EASY HOMEMADE MEATBALL RECIPE

 

Ingredients:

1 pound ground beef - I prefer grass fed from a local farmer here in East Texas

1 eggs, beaten

1/4 cup zucchini, grated

1/4 cup onion, choppped

1/4 cup mushrooms, chopped

3 cloves of garlic, minced or crushed

1/4 cup bread crumbs - The GF/keto/LC substitute is pork rinds, which you can smash yourself or buy smashed

1/4 cup grated parmesan cheese

1/2 teaspoon sea salt

1/4 teaspoon black pepper

2 tablespoons parsley, chopped

1 tablespoon thyme, chopped

This recipe can be baked in the oven or cooked on the stove in a dutch oven or deep pan

Instructions:

Preheat your oven to 400 F.

In a large bowl, add meat, eggs, zucchini, onion, mushrooms, garlic, breadcrumbs/crushed pork rinds, parmesan cheese, salt, pepper, parsley and thyme.

Mix all ingredients. I use my hands.

Form the mix into 1 1/2 inch balls and place in a deep baking pan or dutch oven.

Bake uncovered for 10 minutes then turn them over and bake for another 10 minutes. Before removing from the oven or stove, check to make sure they are fully cooked.

Serve HOT and enjoy!
