Known for its long storage life, Sibley produces teardrop-shaped blue-gray fruit with deep orange, dry, and sweet flesh that improves in flavor after curing.
‘Sibley' squash (aka Pike’s Peak) was introduced commercially in the 1880s, tho it may be traced into the 1830s.
Sibley Squash plants produce Vigorous 12–15' vines, which produce slate-blue fruit described by Michael Pollan as “pinched in both ends and bulging at the waist.”
