Sandwich Island Salsify originated in the Meditteranean during the 1600s

Also referred to as an oyster plant, as some say the plant that tastes like an oyster.

Salsify is very easy to grow so long as the soil has been properly prepared and is available in depth.

An excellent storage root, salsify can also be overwintered for spring harvest, like with parsnips

The foliage, which is mildly sweet, is also edible. Salsify is a biennial that produces attractive edible flowers in its second year.

Delicious!

I grew this in Florida for the first time in 2023. Like carrots, they take quite some time to grow. The foliage is unique and very fun, almost like a decorative grass. Because it was in a section of my vegetable garden, and since i had many people come visit and look at my garden, people nearly always wondered what this spriggy looking plant was. It was fun to have them guess and then when I told them what it was, most had not ever heard of it. I tell them how my parents would make Schorzenera and how they were considered poor man’s asparagus. The mild flavor and texture are a very slight resemblance with asparagus. These are great as a standalone vegetable, served with ham, crumbled boiled eggs and a cheese sauce… This year, I am growing them in Virginia in zone 7, they should do better here. I think zone 9 is just a bit too hot. I grew it over the winter there.
