Elephant Head Amaranth
90 days. This deep red flower is large and can be 10-12 in. long on a 3-5 ft. tall plant. The seeds are edible and can be popped, cooked like a grain or grounded into flour. Not only are the seeds edible, but the young leaves are nutritious greens.
This heirloom was brought to the USA from Germany in the 1880’s.
