Cucuzzi, also known as Italian Edible gourd, can be eaten like a squash. Gourds have light green smooth skin and pale yellow flesh, and grow up 30-48” long and 2” wide. Sow seeds indoors for transplant or directly. Plant in the spring in full sun. 

Big sprawling vines up to 20 feet long, best planted on the edge of the garden

Also called "snake gourd."

Picked very young (less than an inch in diameter,) it is excellent sliced and sautéed, grilled, fried and even pickled.

As it lengthens and increases in diameter, it becomes more firm, perfect slow roasted, baked or puréed for soups, sauces and fillings.
